How to Make Delicious Pumpkin Crab Cakes

While crabs are typically associated with summer, as their harvesting season is mainly during the summer, crab meat can be used year-round.

It’s the time of Jack-o-Lanterns, pumpkin spice lattes, and pumpkin pie–why not add in crab cakes to the mix?  While crabs are typically associated with summer, as their harvesting season is mainly during the summer, crab meat can be used year-round.  And one of the most fascinating, delicious recipes you can make with crab meat is a pumpkin crab cake.  We’ll be sharing the recipe that’s on Kalamazoo Outdoor Gourmet’s website.  Here we go!

Prepare your grill for indirect cooking at 500 degrees fahrenheit.  Then, wash your pumpkin and discard the stem.  Clean out every seed and all the pulp, quartering the remainder, and allow those to roast shell-sides down for around 40 minutes.  Once done, you’ll be able to peel away the skin and cut the flesh into pieces.  At this same heat, roast your poblano chiles over the hottest part of the flame, and then place them aside to steam for 5 minutes.  Stem and seed your chillies.

 

Now, adjust your grill for direct cooking at 400 degrees.  Beat egg yolks, then add butter, mayonnaise, ginger and lemon zest.  Whisk in crushed garlic, then add your peppers, poblanos, scallions, breadcrumbs and panko.  Carefully fold in the crab meat, along with the pumpkin pieces.

 

You can begin to form the crab cakes, making patty shapes.  If the mixture falls apart too easily, add in more mayonnaise.  Coat both sides of the patty in panko, and then place on the grill.  After there are distinct marks, and they are cooked fully, they are ready to serve!
