Pit Beef Has A Rich Tradition In Baltimore

According to local historians, this food originated on the city’s east side along Route 40. Pit beef wasn’t cognized as a Baltimore staple until Boog’s Corner (now recognized as Boog’s BBQ) was built after former Baltimore Orioles first baseman Boog Powell who frequently visited pit beef stands throughout the city.

How Did Pit Beef Become So Popular In The Area

Pit beef’s popularity has grown dramatically over time. More and more barbecue restaurants are including different varieties of pit beef on their menus. The truth is that nobody understands how local pit beef came to be so well-liked. Yet, after many years, locals began noticing pit beef. After a while, pit beef has become a mainstay in the Baltimore area.

How Is It Cooked

Traditional pit beef is spit-cooked over hot charcoals, giving the meat a charred, earthy flavor. Meat is typically served rare and is sliced, either manually or mechanically, into thin, delicate slices. Top round roast is used to make pit beef grilled over hardwood or charcoal. After being cooked, it is thinly sliced, heaped high on bread or a roll, and garnished with horseradish, a few onions, and (sometimes) barbecue sauce. Usually, the dish is accompanied by the side of french fries.
