Its always crab season here at Costas Inn! Before you can start planning your next crab boil, though, take the time to learn more! There are several different types of crab meat to use depending on what you want to make!

JUMBO LUMP

Jumbo lump crab meat comes from the swimmer fins. Even so, it takes many crabs to make that jumbo lump worth it. For this reason, the jumbo lump is uncommonly pricey. It has got an unbeatable taste, though, so if you are planning for a big party or other special occasions, don’t feel obligated to pass it up! 

LUMP

Typical lump crab meat comes from the main body of the crab. You don’t get as much meat, but it is still firm and tasty. So if you are worried about mashed crab, now you don’t have to, because you will have crab cakes instead! 

BACKFIN

Backfin crab meat is made of other pieces that won’t fit anywhere else. At first glance, this doesn’t sound appetizing. We understand your confusion and hesitance. That said, crab cakes often incorporate backfin meat. It’s probably tastier to use more meat and less filler, even if you like the fact that breadcrumbs are often used as binding to help hold the cakes together. Plus, it makes it more gluten-free-friendly as well!  

CLAW

Eating crab meat is a favorite pastime for many Maryland residents. This experience becomes even more enjoyable when you have the claw crackers to dig in there. Claw meat looks much darker than its counterparts. It’s also not as sweet – think of it as a parallel to milk chocolate and dark chocolate. The flavor of the claw meat is out of this world, though. Try it in soup, appetizers, finger foods, and anything where you want to highlight crab’s natural deliciousness!
