A Sizzling Introduction to Freshly-Made Sea Scallops

Choosing the Best Scallops 

The key to making the tastiest seafood dishes you can is to pick the best individual ingredients. No matter which meal you want to make, it’s crucial that you choose the best scallops that you can find. You’ll notice that the scallops come pre-shucked so that they’re not held in their shells anymore. When you see snow-white scallops, don’t get them. That’s because they’ve been submerged in water. They absorb water which makes them heavier (and pricier) per pound. The freshest finds are light beige or creamy pink. They should look clean, smell fresh, and feel moist. 

Storing Them Safely 

Once you get them home, stick them in the fridge right away. Don’t delay your meal plans with them. Instead, cook them and eat them within the next 24 hours after purchase. You can also poach and freeze them. Amazingly, they’ll keep for up to three months through this storage method.  

Quick Tips for Cooking Your Catch 

Considering you might not live close enough to a spot to get fresh scallops (unless you come and have dinner in our house, that is), you should consider buying flash-frozen ones. Let them thaw before you prepare them. Some good techniques to use are sauteing, grilling, broiling, or poaching. An overcooked scallop isn’t very appealing, though. That’s because they’re tough and rubbery. So it might take a few tries to get it right. Once you do, though, you can add them to sushi rolls or ceviche offerings. However you want to do it, your best friends will be a hot skillet and a quick timer. Herbs, spices, and sauces will add more flavors, as well!
