It is important to remember that fish is always going to taste far better when you purchase it fresh instead of frozen. For that reason, here are some tips to help to determine if a fish is fresh or not.
When Buying Fish Whole
Look For Bright Eyes
When buying fish whole, you want the fish to have bright clear eyes. When a fish is truly fresh, the eyes will be clear for a brief period and will fade to a grayish color. You can still eat fish that have dull-colored eyes, just should know that it is not going to be as good.
Look At The Gills
If the fish is fresh, the gills should be a rich red color. If they are a faded rust color that should be a major red flag.
Smell It
It is always a good idea to smell a whole fish before you purchase it. If it is fresh, it should smell like clean water. Don’t ever purchase that smells bad. Many people are under the misconception that cooking an old fish will make it better. This is certainly not the case.

Smells are especially concerning for fish fillets. If a fillet has a strong odor, stay away.
Look At The Liquid
If there is liquid on the fish, it should be clear. If the fluid is white, that is a sign that the fillet is old and you should not buy it.
