The Birthplace of Crab Cakes

Although crab cakes have spread out all over the country, it is generally thought that the watershed around the Chesapeake Bay gave rise to the first generation of crab cakes. It wasn’t until the 1930s, when Crosby Gaige wrote down a crab cake recipe, that it became recognized as a delicacy. However, that doesn’t mean that crab cakes weren’t already being consumed before then. Adding fillers helped thicken the cakes and make the meal more satisfying in a time when food was scarce, and meals had to be inventive.
